This is a great way to use your left over Thanksgiving turkey…it also feeds a crowd.
Ingredients: 1 8 oz. prepared stuffing 3 C. chopped turkey 1/2 C. margarine or butter 1/2 C. flour 1/4 t. salt dash pepper 4 C. chicken or turkey broth 6 eggs 1 (10 3/4-oz) can Cream of Mushroom Soup 1/2 C. milk 1 C. Sour Cream
Directions: In 9X13 greased dish spread stuffing mix and cover with turkey pieces In saucepan melt margarine, add salt and pepper, thicken with flour and slowly add broth. In bowl, whisk eggs and slowly add about 2 cup of broth mixture to warm, then put egg/broth mixture into remaining broth. Pour over stuffing and turkey. Bake at 350 degrees, uncovered, 45 minutes or until the egg/broth mixture sets. Prepare sauce by mixing mushroom soup, milk, and sour cream and then heat. Serve casserole cut into squares with sauce in a side bowl to drizzle on top. Enjoy!
